The salty, lime taste of this pepper is a result of early harvesting before the pepper produces heat and turns color. Although our recipe uses added salt, it is the salty flavor of the pepper that is most prevalent in this sauce. Use on fresh fish, tomato salsa, strawberry salsa or coleslaw.
