Grilled Lemon Herb Chicken

6-8 boneless, skinless chicken breasts
Marinade:
1/2 cup MOOC Extra Virgin Olive Oil       1/4 cup Sicilian Lemon White Balsamic
1/4 cup fresh-squeezed lemon juice        1 TSP fresh lemon zest
1 TSP dried rosemary                              1 TSP dried oregano
Fresh ground black pepper to taste         1 TSP poultry seasoning
 
Trim all visible fat and membranes from chicken breasts, make small crosswise slits about 1/2” apart down the length of each chicken breast to help the marinade penetrate.
Put chicken in a single layer Ziploc bag.
Combine marinade ingredients and pour over chicken.
Marinate in refrigerator 6-8 hours.
Preheat grill to medium-hot and grill chicken 20-25 minutes, or until well browned and firm (internal temp of 170 degrees). Chicken can also be cooked in a stove-top or electric grill pan.
Chicken is great cut up in a salad, or mixed with stir-fried veggies.
Makes 6-8 servings
