Smoke point and your olive oil

So olive oil smokes at a low temperature, right?
Wrong (sort of). 

Free fatty acids (FFA's) are chains of fat molecules that are not attached to anything else. Long story short - they are bad for you (and your oil). Higher FFA content is an indicator of poor quality olive oil. FFA's will also determine the smoke point of your olive oils.

Our oils and balsamics make great condiments or ingredients on their own, but mixing them together can give you some amazing flavor combinations. My favorite salad dressing is raspberry balsamic and lemon olive oil - give it a try! You'll never go back to any other dressing! Here's a list of our suggested pairings.

EVOO Pairs

Our Extra Virgin Olive Oils pair well with any of our balsamic vinegars. Milder oils go nicely with white balsamics and more robust go well with our dark balsamics.
